Yirgacheffe (pronounced "Yer-ga-chef") is a small highland district in the Gedeo Zone of southern Ethiopia, sitting at elevations between 1,700 and 2,200 meters above sea level. Despite its size, it produces coffee that specialty roasters and competition judges consistently rank among the finest on the planet.

The elevation slows cherry development, allowing more time for sugars and complex flavor compounds to build inside the bean. Before producers like Bagersh elevated the craft, naturally processed coffees were often marred by over-fermentation, sourness, or mold from improper drying. Abdullah's answer was precision: hand-selected cherries only, placed immediately on raised drying beds and turned constantly for the first 48 hours to ensure even evaporation. From there, the beans dry slowly in the cool, misty highland air — hence "Misty Valley" — building complexity without chaos.

Natural vs. Washed: What Makes the Difference?

Natural Yirgacheffe (like the Idido Misty Valley) keeps the cherry intact during drying. The bean ferments slowly inside the fruit, absorbing sugars and fruit compounds over weeks. How to Brew Ethiopia Yirgacheffe Coffee
To get the most from a natural Yirgacheffe, brewing method matters.
Pour-Over (V60 or Chemex) — Recommended
The best way to highlight the fruit and floral notes. Use a medium-fine grind, water at 200°F (just off boil), and bloom for 45 seconds before pouring.

- Brew time: 3:00–3:30
French Press
Amplifies the body and brings the stone fruit sweetness forward. Expect a fuller, richer mouthfeel with the strawberry note mellowed into something closer to jam.

Cold Brew
The strawberry and stone fruit notes intensify dramatically over a long steep. This is one of the best naturals for cold brew — it comes out tasting like iced fruit tea with serious depth.
